Easy Mexican Rice Bowl

This recipe is for weeknight cooks who need a fast meal. I tested this to keep prep minimal without losing bold flavor.

Ingredients
  

  • 2 cups cooked rice
  • 1 cup cooked chicken or beans
  • 1/2 cup salsa
  • 1/2 cup corn
  • 1/2 cup black beans
  • 1 tsp cumin

Instructions
 

  • Heat rice in a skillet over medium heat.
  • Stir in salsa and cumin.
  • Add chicken (or beans), corn, and black beans.
  • Cook until heated through.
  • Serve as a quick lunch or dinner bowl.
