Easy Cucumber Caprese Salad
I photographed this salad during a sunny afternoon shoot, and its simplicity instantly won me over. The crisp cucumbers with creamy mozzarella felt like the perfect twist on a classic Caprese — light, beautiful, and effortless.

- 1 English cucumber
- 8 ounces fresh mozzarella pearls drained
- 2 cups grape tomatoes
- 1/3 cup fresh chopped basil
- 1/3 cup balsamic vinaigrette
Slice the cucumber in half lengthwise, then slice in half again. Chop into bite sized pieces.
Combine the cucumber, mozzarella pearls, and tomatoes in a medium mixing bowl.
Add the basil and balsamic vinaigrette and stir gently.
Serve immediately or refrigerate until ready to serve.
You can add sliced red onion or chopped avocado. You can also substitute balsamic glaze for the vinaigrette, or drizzle with extra virgin olive oil and aged balsamic vinegar. If you want to add pesto, use your favorite basil pesto. Add your favorite protein, such as chicken, shrimp or steak. You may also peel the cucumbers before adding them to the salad.
