Easy Brunch Recipe with Eggs and Feta

Eggs and feta were always my go-to when brunch needed to feel special without being complicated.

Equipment

  • Small baking dish

Ingredients
  

  • 4 eggs
  • 1/2 cup crumbled feta
  • 1 cup spinach
  • Olive oil For greasing
  • Black pepper To taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Grease a small baking dish with olive oil.
  • Add the spinach to the bottom of the dish.
  • Crack the eggs directly over the spinach layer.
  • Sprinkle the crumbled feta and black pepper over the eggs.
  • Bake for 12 to 15 minutes, or until the egg whites are set.

Notes

This dish is simple to scale up if you are hosting a larger brunch buffet. Serve immediately.
