Easy Brunch Recipe with Eggs and Feta
Eggs and feta were always my go-to when brunch needed to feel special without being complicated.

Ingredients

eggs
1/2
cup
crumbled feta
1
cup
spinach
Olive oil
For greasing
Black pepper
To taste
Instructions
Preheat your oven to 375°F (190°C).
Grease a small baking dish with olive oil.
Add the spinach to the bottom of the dish.
Crack the eggs directly over the spinach layer.
Sprinkle the crumbled feta and black pepper over the eggs.
Bake for 12 to 15 minutes, or until the egg whites are set.
Notes
This dish is simple to scale up if you are hosting a larger brunch buffet. Serve immediately.
