Ingredients
  

  • 2 whole English cucumbers ends trimmed, cut into 1/2-inch pieces
  • 3 small Roma tomatoes cut into 1/2-inch pieces
  • 0.5 red onion halved and sliced thin
  • 1/3 cup water
  • 1/3 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh dill
  • Feta cheese and/or avocado optional, for extra creaminess and flavor

Instructions
 

  • Chop cucumbers and tomatoes into 1/2-inch pieces. Slice red onion thin. Combine all in a large mixing bowl.
  • In a small jar, combine water, apple cider vinegar, sugar, salt, and pepper. Shake well for 10 seconds until sugar dissolves.
  • Pour dressing over vegetables. Toss gently to coat.
  • Refrigerate for at least 1 hour to allow flavors to blend.
  • Drain excess liquid, sprinkle chopped dill on top, and stir again before serving. Optionally top with feta or avocado.

Notes

For a creamy twist, mix in crumbled feta or diced avocado just before serving. Great for summer meals and gatherings.
