Crockpot Stuffed Pepper Soup
This soup brings the flavor of stuffed peppers to a simple, one-pot meal made in your slow cooker. It is a comforting dish perfect for busy weeknights.

For the Soup
- 1 pound ground beef
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1 cup cooked white or brown rice
- 1/3 cup onion diced
- 2 garlic cloves minced
- 4 cups beef broth
- 15 ounces diced tomatoes in juices
- 1 tablespoon dried oregano
- 1 1/2 teaspoons salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon pepper
- 1 tablespoon oil
Add the oil to a large skillet over medium-high heat. When hot, add the ground beef, onion, and garlic. Cook until the beef is browned, approximately 5 to 7 minutes. Stir frequently and crumble the beef as it cooks. Drain the grease and add the mixture to the slow cooker.
Add the bell peppers, diced tomatoes, broth, oregano, paprika, salt, and pepper to the slow cooker. Stir to mix well.
Cook on HIGH for 3 to 4 hours or LOW 6 to 8.
The last 10 minutes of cooking time, stir in the cooked rice.
Season with salt & pepper to taste.
This soup became one of my favorite slow-cooker dishes to style. I loved how the peppers softened into the broth while still keeping their color. It took me back to evenings when my mom made the house smell like comfort hours before dinner.
