Creamy Sausage Potato Soup

This recipe makes a hearty, comforting soup perfect for families. I refined the creaminess carefully so the soup stayed rich without feeling heavy.

Ingredients
  

  • 1 lb turkey sausage sliced or crumbled
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups potatoes peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 tsp dried thyme
  • Salt and black pepper
  • Chopped parsley for garnish (optional)

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add turkey sausage and cook until lightly browned. Remove the sausage and set it aside.
  • In the same pot, sauté the onion until soft, about 5 minutes.
  • Add garlic and cook for 30 seconds.
  • Add potatoes, chicken broth, thyme, salt, and pepper to the pot.
  • Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 15 to 20 minutes until the potatoes are tender.
  • Stir in the cooked sausage and cream.
  • Simmer for 5 minutes, adjust the seasoning as needed, and serve the soup hot. Garnish with parsley if you are using it.

Notes

This soup is filling and comforting. You can use half-and-half instead of heavy cream for a slightly lighter texture.
