Creamy Chicken Pasta Meal Prep

This recipe provides a simple, make-ahead lunch option that maintains its creamy texture when reheated. It is designed for planners who want lunches that taste fresh later in the week.

Ingredients
  

  • 400 g Pasta
  • 500 g Chicken breast, cubed
  • 1 tbsp Olive oil
  • 250 ml Light cream
  • 80 g Grated Parmesan
  • 1 tsp Italian seasoning
  • to taste Salt & pepper

Instructions
 

  • Cook the pasta according to package directions. Drain the pasta and set it aside.
  • Cook the cubed chicken in olive oil in a skillet over medium heat until the chicken is golden brown and cooked through.
  • Reduce the heat. Stir in the light cream, grated Parmesan, Italian seasoning, salt, and pepper into the skillet with the chicken. Heat gently until the sauce thickens slightly.
  • Combine the cooked pasta with the creamy chicken sauce until everything is evenly coated.
  • Divide the finished pasta into your meal prep containers. This recipe keeps well for 4 days when refrigerated.

Notes

I tested this recipe specifically for leftovers, and it held its creamy texture beautifully all week when stored correctly.
