Cottage Cheese Lasagna Soup

- 1 lb ground chicken or turkey
- 8 lasagna noodles broken
- 1 jar marinara sauce
- 4 cups chicken broth
- 1 tsp Italian seasoning
- 3/4 cup cottage cheese
Brown the ground chicken or turkey in a large pot over medium heat.
Add the marinara sauce and chicken broth to the pot.
Stir in the broken lasagna noodles and Italian seasoning.
Simmer the soup until the noodles are soft.
Serve the soup hot. Stir the cottage cheese into individual bowls or add it on top before serving.
This recipe is a lighter take on classic lasagna, using cottage cheese for creaminess instead of heavy cream or ricotta.
