Ingredients
  

  • 1 lb ground chicken or turkey
  • 8 lasagna noodles broken
  • 1 jar marinara sauce
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 3/4 cup cottage cheese

Instructions
 

  • Brown the ground chicken or turkey in a large pot over medium heat.
  • Add the marinara sauce and chicken broth to the pot.
  • Stir in the broken lasagna noodles and Italian seasoning.
  • Simmer the soup until the noodles are soft.
  • Serve the soup hot. Stir the cottage cheese into individual bowls or add it on top before serving.

Notes

This recipe is a lighter take on classic lasagna, using cottage cheese for creaminess instead of heavy cream or ricotta.
