Comfort Sausage Potato Soup

This recipe makes a hearty, warming soup perfect for cool days. The texture of the potatoes was tested to ensure they remain tender but do not break down completely.

Ingredients
  

  • 400 g ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 500 g potatoes, peeled and diced
  • 1 L chicken broth
  • 200 ml heavy cream
  • 2 g salt
  • 1 g black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground turkey and cook until browned, breaking it apart.
  • Add onion and garlic, cook 3–4 minutes until soft.
  • Stir in potatoes and chicken broth.
  • Bring to a boil, then reduce to simmer for 18–20 minutes until potatoes are tender.
  • Stir in cream, salt, and pepper.
  • Simmer 5 more minutes and serve hot.

Notes

I tested this soup focusing on texture; the potatoes should be tender but not mushy after simmering.
