Cinnamon Swirl Banana Bread

This recipe makes a fragrant quick bread with a ribbon of cinnamon sugar running through it. The smell when baking makes the house feel warm. Family members gather before the bread finishes cooling, showing how popular cinnamon is in the kitchen.

Ingredients
  

Banana Bread

  • 3 ripe bananas mashed
  • 120 g melted butter
  • 150 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 190 g flour
  • 1 tsp baking soda
  • 1 pinch salt

Cinnamon Swirl

  • 70 g brown sugar
  • 2 tsp cinnamon

Instructions
 

  • Mix the mashed bananas, melted butter, sugar, eggs, and vanilla extract together in a bowl.
  • Add the flour, baking soda, and salt to the wet ingredients. Mix until just combined.
  • Pour half of the batter into a prepared loaf pan.
  • In a small bowl, mix the brown sugar and cinnamon for the swirl.
  • Sprinkle the cinnamon mixture evenly over the batter in the pan. Top with the remaining batter.
  • Use a knife to gently swirl the top layer of batter to create a ribbon effect.
  • Bake at 175°C (350°F) for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.

Notes

This bread is excellent served warm. For ingredient substitutions, you can replace the butter with an equal amount of coconut oil for a different flavor profile. This recipe is best made with very ripe, spotty bananas for the most moisture and sweetness.
