Cinnamon Crunch Banana Bread
This recipe makes a tender banana loaf featuring a sweet, crunchy cinnamon-sugar topping. The contrast between the soft bread and the crisp topping makes this a favorite for families and snack lovers.

Banana Bread
- 3 large ripe bananas mashed
- 120 g melted butter
- 150 g sugar
- 2 eggs
- 1 tsp vanilla extract
- 190 g all-purpose flour
- 1 tsp baking soda
- 1 pinch salt
Crunch Topping
- 80 g brown sugar
- 2 tsp cinnamon
- 40 g melted butter
- 50 g all-purpose flour
Combine the mashed bananas, 120g melted butter, sugar, eggs, and vanilla extract in a bowl. Mix these wet ingredients together.
Add the flour, salt, and baking soda to the wet mixture. Mix gently until just combined. Do not overmix the batter.
Pour the batter into a prepared loaf pan.
Prepare the topping by mixing the brown sugar, cinnamon, the remaining flour, and the 40g melted butter until crumbly.
Sprinkle the topping mixture generously over the batter in the loaf pan.
Bake at 175°C for 55 to 60 minutes, or until the top is crunchy and golden brown and a toothpick inserted into the center comes out clean.
My kids enjoyed sprinkling the crunchy topping over the batter. Watching it bake into a crackly layer was as satisfying as tasting the final bread.
