Chicken Taco Bowl

This is one of those meals where everyone builds their own bowl, and dinner feels relaxed and happy.

Ingredients
  

  • 500 g chicken breast, diced
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning
  • 1 cup cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup salsa

Optional toppings

  • sour cream Optional
  • cheese Optional
  • avocado Optional

Instructions
 

  • Sauté chicken in olive oil until cooked through.
  • Add taco seasoning and toss to coat the chicken.
  • Add rice to individual serving bowls.
  • Top the rice with the seasoned chicken, lettuce, and salsa.
  • Finish each bowl with your desired toppings like sour cream, cheese, or avocado.

Notes

This meal works well for meal prep. You can assemble the base components ahead of time and keep the toppings separate. Everyone can build their own bowl when ready to eat.
