Chicken Summer Skillet Dinner

- 2 chicken breasts, cut into pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic
- 1 cup zucchini, sliced
- 1/2 cup cherry tomatoes
- 1/2 cup chicken broth
- 1/4 cup parmesan
- to taste salt
- to taste pepper
Heat the oil and butter in a skillet over medium heat.
Cook the chicken pieces for 5 to 6 minutes until they are golden brown and cooked through. Remove the chicken from the skillet.
Add the garlic and vegetables to the skillet. Sauté for 3 to 4 minutes until the vegetables are slightly softened.
Pour in the chicken broth and let it simmer for 2 minutes.
Return the cooked chicken to the skillet. Add the parmesan cheese and stir everything until the sauce lightly thickens.
Serve the dish directly in the skillet. Garnish with herbs and extra parmesan if desired.
This one-pan meal minimizes cleanup. You can substitute other summer vegetables for the zucchini and tomatoes based on what you have available.
