Chicken Summer Skillet Dinner

Skillet cooking kept everything flavorful with minimal effort. This recipe provides a quick meal solution for home cooks.

Ingredients
  

  • 2 chicken breasts, cut into pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic
  • 1 cup zucchini, sliced
  • 1/2 cup cherry tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup parmesan
  • to taste salt
  • to taste pepper

Instructions
 

  • Heat the oil and butter in a skillet over medium heat.
  • Cook the chicken pieces for 5 to 6 minutes until they are golden brown and cooked through. Remove the chicken from the skillet.
  • Add the garlic and vegetables to the skillet. Sauté for 3 to 4 minutes until the vegetables are slightly softened.
  • Pour in the chicken broth and let it simmer for 2 minutes.
  • Return the cooked chicken to the skillet. Add the parmesan cheese and stir everything until the sauce lightly thickens.
  • Serve the dish directly in the skillet. Garnish with herbs and extra parmesan if desired.

Notes

This one-pan meal minimizes cleanup. You can substitute other summer vegetables for the zucchini and tomatoes based on what you have available.
