Chicken Burrito Bowl

Ingredients
  

For the Bowl

  • 1 cup rice
  • 1.5 cups water
  • 1 cup grilled chicken
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/2 whole avocado
  • 1/2 cup tomatoes

For the Sauce

  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp cumin

Instructions
 

  • Cook the rice with water until fluffy. Let the rice steam dry after cooking.
  • Grill the chicken until it is juicy and has slight char marks.
  • Assemble the bowl by layering the rice, chicken, beans, corn, tomatoes, and avocado.
  • Mix the Greek yogurt, lime juice, and cumin for the sauce. Drizzle the sauce evenly over the bowl.
  • Keep the ingredients separated when serving for a colorful look. Garnish with cilantro.
