Instructions
In a large skillet, cook ground turkey or beef over medium-high heat until no longer pink. Drain fat, if any.
Add the garlic, salt, pepper, smoked paprika, and taco seasoning to the pan. Mix everything together.
Add the can of diced tomatoes, 2 cups of chicken broth, and orzo to the pan. Stir well, ensuring the orzo is mixed with the liquid. Bring to a boil.
Reduce heat to medium-low, mix ingredients again, and cover. Cook for 12-15 minutes, stirring occasionally to prevent sticking. Add more broth if needed.
Once orzo is fully cooked, sprinkle on the cheese and mix it in. Serve with optional toppings if desired.
Notes
For extra flavor, top with fresh cilantro or a squeeze of lime juice before serving.
