Caprese Stuffed Cherry Tomatoes

- 1 pint cherry tomatoes
- 3/4 cup fresh mozzarella finely diced
- 2 tbsp olive oil
- Fresh basil finely chopped
- Salt and pepper to taste
Slice the tops off the cherry tomatoes and gently scoop out the seeds.
Mix the diced mozzarella with the chopped basil, olive oil, salt, and pepper in a small bowl.
Spoon the mozzarella filling into the hollowed-out tomatoes.
Chill the stuffed tomatoes for 15 minutes before you serve them.
