Caprese Salad with Basil & Cucumber

This salad combines fresh tomatoes, mozzarella, and cucumber with basil for a light, no-cook meal. Arranging the basil leaves and cucumber slices felt calming; this salad almost styles itself with its natural beauty.

Ingredients
  

  • 1 pint Cherry tomatoes
  • 8 oz Fresh mozzarella Drained
  • 1 Cucumber
  • Basil leaves

Dressing

  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice Freshly squeezed
  • 1/2 tsp Salt To taste
  • 1/4 tsp Pepper Freshly ground, to taste

Instructions
 

  • Slice the cherry tomatoes, cucumber, and fresh mozzarella into uniform pieces.
  • In a large bowl, gently toss the sliced tomatoes, cucumber, and mozzarella together.
  • Whisk together the olive oil, lemon juice, salt, and pepper to create the dressing.
  • Pour the dressing over the salad and toss lightly to coat all ingredients.
  • Add the fresh basil leaves just before you serve the salad.

Notes

This salad works well as a light dinner or a side dish for grilled proteins. For ingredient substitutions, you can use balsamic vinegar instead of lemon juice for a slightly different flavor profile. If you do not have fresh mozzarella, use small mozzarella balls (bocconcini).
