Breakfast Sandwich You Can Meal Prep

Ingredients
  

  • 4 eggs
  • 4 whole-grain English muffins or sandwich buns
  • 4 slices cheese
  • as needed Olive oil
  • to taste salt
  • to taste pepper

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Whisk eggs with salt and pepper.
  • Pour into a lined baking dish and bake 15–18 minutes until set.
  • Cut baked eggs into squares.
  • Toast muffins lightly.
  • Assemble sandwiches with egg and cheese.
  • Wrap individually and refrigerate or freeze.
  • Reheat before serving.
