Blueberry Cottage Cheese Muffins

I first made these muffins on a quiet weekend morning when my kids were still in their pajamas. The smell of blueberries baking filled the kitchen, and we ended up eating them warm at the table together — one of those simple moments that stays in your heart.

Ingredients
  

  • 200 g Cottage cheese
  • 2 Eggs
  • 80 g Oat flour
  • 60 g Honey
  • 120 g Blueberries
  • 1 tsp Baking powder

Instructions
 

  • Mix the cottage cheese, eggs, oat flour, honey, and baking powder gently in a bowl.
  • Fold in the blueberries carefully.
  • Fill your prepared muffin cups with the batter.
  • Bake at 180°C (350°F) for 22 to 25 minutes.

Notes

These muffins have a tender crumb and a subtle creaminess from the cottage cheese. They are good for breakfast or a snack.
