Blended Banana Bread Overnight Oats

This recipe creates creamy, grab-and-go breakfast oats with the flavor of banana bread. Blending the banana into the liquid base gives the oats a smooth texture. This is a good option for meal prepping for busy mornings.

Ingredients
  

Oats Mixture

  • 1 cup Old-fashioned rolled oats
  • 1 Medium ripe banana
  • 1 cup Milk (dairy or non-dairy)
  • 1/4 cup Plain Greek yogurt
  • 2 tablespoons Maple syrup
  • 1/2 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1 pinch Salt

Optional Mix-ins and Toppings

  • 2 tablespoons Chopped walnuts Optional
  • 1 tablespoon Mini chocolate chips Optional
  • Sliced banana For topping

Instructions
 

  • Add the banana, milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to a blender. Blend on high speed for 30 to 45 seconds until completely smooth and creamy.
  • Pour the blended mixture into a large mixing bowl or directly into your storage containers.
  • Add the rolled oats to the blended liquid and stir well to ensure all oats are fully coated and submerged.
  • If using, fold in the chopped walnuts and mini chocolate chips, reserving some for topping if you want.
  • Divide the mixture evenly between two mason jars or airtight containers with lids.
  • Cover tightly and refrigerate for at least 4 hours, or preferably overnight (8 to 12 hours) to allow the oats to fully absorb the liquid and soften.
  • In the morning, give the oats a good stir. If the consistency is too thick, add a splash of milk to reach your desired texture.
  • Top with fresh banana slices, extra walnuts, chocolate chips, or a drizzle of maple syrup before serving. Eat cold straight from the fridge or warm in the microwave for 30 to 60 seconds.

Notes

I developed this recipe when I needed a quick breakfast that tasted like my grandmother's banana bread. Blending the banana creates a creamy texture that mimics the baked flavor. I make a double batch every Sunday for my weekday meals.
