1 cup pineapple juice
½ cup granulated sugar
½ cup unsalted butter softened
1 tsp vanilla extract
2 large eggs
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¼ cup milk
½ cup crushed pineapple drained

Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan
Beat butter and sugar until light and fluffy
Mix in eggs one at a time then add vanilla
In a separate bowl whisk together flour baking powder baking soda and salt
Alternately add the pineapple juice milk and dry ingredients mixing until just combined
Gently stir in crushed pineapple
Pour batter into prepared pan and bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean
Let cool before slicing and serving enjoy
